Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In one bowl, mix granulated sugar with lemon zest and melted butter to prepare the crumble topping. Gradually stir in flour until crumbly.
- In another bowl, cream together room temperature butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and buttermilk until combined.
- Whisk together flour, salt, and baking powder in a separate bowl. Gradually add this mix to the wet ingredients.
- Fold in lemon juice and zest until evenly distributed.
- Pour half the batter into the prepared pan, sprinkle half the crumble on top, then add remaining batter followed by the rest of the crumble.
- Bake for about 40 minutes or until a toothpick comes out clean. Allow cooling before serving.
