- 1 1/2 lbs boneless skinless chicken breasts
- 1/4 cup lemon juice
- 1/4 cup white apple vinegar
- 5 cloves garlic (minced)
- 2 Tbsp chopped fresh basil
- 2 Tbsp chopped fresh mint
- 2 Tbsp chopped fresh parsley
- 1 1/2 tsp dried oregano
- 1 tsp kosher salt
- 1/4 – 1/2 tsp black pepper
- 1/2 cup olive oil
Instructions
- Prepare the chicken by flattening it to about an inch thick using a meat mallet.
- In a resealable plastic bag, mix the marinade ingredients: lemon juice, vinegar, garlic, herbs, salt, pepper, and olive oil.
- Add the chicken to the bag, seal tightly, and massage to coat evenly. Refrigerate for at least one hour or up to eight hours.
- Preheat your grill to medium-high heat. Lightly oil the grates.
- Grill each chicken breast for about 5-6 minutes per side until the internal temperature reaches 165°F. Let rest for five minutes before serving.
