Ingredients

  • 4 boneless skinless chicken breasts
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Olive oil, salt, and pepper

Instructions

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat; cook chicken for 3-4 minutes per side until golden brown. Remove from the pan.
  3. In the same pan, sauté garlic for 1 minute, then add chicken broth, lemon juice and zest. Bring to a boil.
  4. Reduce heat; stir in heavy cream and simmer for 5 minutes before adding Parmesan cheese until melted.
  5. Add spinach to the sauce; cook until wilted. Return chicken to the pan; spoon sauce over chicken and sprinkle with extra Parmesan.
  6. Garnish with thinly sliced lemon and serve immediately.
