- 4 boneless skinless chicken breasts
- 3 cloves garlic (minced)
- 1 cup chicken broth
- ¾ cup heavy cream
- Juice and zest of 1 lemon
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach leaves
- Olive oil, salt, and pepper
Instructions
- Pound chicken breasts to an even thickness and season with salt and pepper.
- Heat olive oil in a large sauté pan over medium-high heat; cook chicken for 3-4 minutes per side until golden brown. Remove from the pan.
- In the same pan, sauté garlic for 1 minute, then add chicken broth, lemon juice and zest. Bring to a boil.
- Reduce heat; stir in heavy cream and simmer for 5 minutes before adding Parmesan cheese until melted.
- Add spinach to the sauce; cook until wilted. Return chicken to the pan; spoon sauce over chicken and sprinkle with extra Parmesan.
- Garnish with thinly sliced lemon and serve immediately.
