Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine sugar and lemon zest. Beat in softened butter until creamy; add egg and vanilla extract until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, poppy seeds, and salt. Gradually mix into wet ingredients until just combined.
- Drop rounded tablespoons of dough onto the baking sheet and bake for about 10 minutes until golden around the edges. Cool on a rack.
- For frosting, beat cream cheese, vanilla extract, powdered sugar, agave/honey, and heavy cream until smooth. Frost cooled cookies.
- Optionally sprinkle with poppy seeds and garnish with lemon slices before serving.
