Ingredients

Instructions

  1. Use a vegetable peeler to remove long strips of lemon peel from the lemons, avoiding the white pith.
  2. Combine the peels and lemon juice in a large bowl or bottle, cover with plastic wrap, and let steep at room temperature for 4 days.
  3. In a large saucepan over medium heat, dissolve sugar in water to make simple syrup; cool completely.
  4. Mix cooled syrup with the lemon juice mixture; stir well.
  5. Strain through a mesh strainer into clean bottles, discarding peels. Seal tightly and refrigerate for at least 4 hours before serving.
