Ingredients
- 2 slices whole-grain or sourdough bread
- 1 ripe avocado
- 1 medium cucumber, thinly sliced
- 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
- 1/4 cup cherry tomatoes, halved (optional)
- 2 tbsp red onion, thinly sliced
- 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
- 1 tsp lemon juice
- Salt and pepper to taste
- 1 tsp olive oil or favorite sandwich spread (optional)
Instructions
- If desired, lightly toast the bread until golden brown.
- In a mixing bowl, mash the avocado with lemon juice, salt, and pepper until smooth.
- Spread the mashed avocado evenly over one side of each slice of bread.
- Layer thin cucumber slices on top of the avocado.
- Add leafy greens and red onions; if using cherry tomatoes, add them now.
- Sprinkle fresh herbs on top for added flavor.
- Drizzle optional olive oil or spread before closing with the other slice of bread.
- Cut in half if desired and serve immediately.
