Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Crush the fresh mandarin oranges in a food processor until smooth.
- In a mixing bowl, cream the softened butter and sugar until fluffy. Add egg yolks one at a time, mixing thoroughly after each addition. Stir in crushed oranges and vanilla extract.
- In another bowl, sift together cake flour, baking powder, and salt. Gradually incorporate this mixture into the wet ingredients alternating with milk until just combined.
- Pour batter evenly into prepared pans and bake for 25-28 minutes or until a toothpick comes out clean. Let cool before serving.
