- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 cup diced fresh mango
- 1/2 cup shredded coconut
- 1 tablespoon honey
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper.
- In a food processor, blend rolled oats, flour, brown sugar, and butter until crumbly.
- Press the mixture firmly into the prepared pan for the base layer.
- In a bowl, combine diced mango, shredded coconut, honey, and vanilla; mix well and spread over the base.
- Bake for 25–30 minutes or until golden brown.
- Allow to cool before cutting into bars.
