- 1 cup unsalted butter (room temperature)

- 2 tsp vanilla extract
- 2 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tbsp ube powder
- 1 tbsp ube extract
Instructions
- Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
- In a stand mixer, beat together butter and sugar until smooth. Add egg and vanilla; mix until blended.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture and combine until just incorporated.
- Divide dough in half; mix one half with ube powder and extract until well blended.
- Roll tablespoon-sized balls from both doughs into marbled shapes and coat in sugar.
- Place on prepared baking sheet, spacing them evenly. Bake for 11-14 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
