Ingredients
- 4–5 medium ripe tomatoes (1.5 pounds), sliced
- 1 medium red onion, very thinly sliced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup (optional)
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh basil (or 1 tablespoon dried oregano)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Wash the tomatoes and basil; slice the tomatoes into rounds or wedges and the red onion into half-moons.
- In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey (if using), salt, and pepper.
- In a large bowl, combine the sliced tomatoes and red onions. Pour the dressing over them and gently toss until well-coated.
- Add the chopped basil and mix again. Allow the salad to marinate for at least 30 minutes before serving.
