  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ½ cup milk
  • 2 large eggs
  • ¾ cup breadcrumbs
  • Ketchup (for both the mixture and glaze)
  • Italian seasoning, salt, black pepper
  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Sauté chopped onion in butter until soft; add minced garlic and cook briefly.
  3. In a bowl, mix sautéed onions, ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley until just combined.
  4. Shape into a loaf in a loaf pan and smooth the top.
  5. Bake for 40 minutes; prepare glaze with ketchup, brown sugar, and vinegar.
  6. After 40 minutes of baking, spoon glaze over meatloaf and return to oven for an additional 20-30 minutes until cooked through.
  7. Let rest for 10 minutes before slicing.
