- 2 large eggs
- ¾ cup breadcrumbs
- Ketchup (for both the mixture and glaze)
- Italian seasoning, salt, black pepper
- Fresh parsley (optional)
Instructions
- Preheat oven to 350°F.
- Sauté chopped onion in butter until soft; add minced garlic and cook briefly.
- In a bowl, mix sautéed onions, ground beef, milk, eggs, breadcrumbs, ketchup, Italian seasoning, salt, pepper, and parsley until just combined.
- Shape into a loaf in a loaf pan and smooth the top.
- Bake for 40 minutes; prepare glaze with ketchup, brown sugar, and vinegar.
- After 40 minutes of baking, spoon glaze over meatloaf and return to oven for an additional 20-30 minutes until cooked through.
- Let rest for 10 minutes before slicing.
