- 1.5 lbs white fish fillets (cod, halibut, or tilapia)
- 2 tablespoons olive oil
- 1 medium red onion, sliced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1/3 cup pitted Kalamata olives, halved
- Juice and zest of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- In a mixing bowl, combine sliced onion, bell peppers, cherry tomatoes, minced garlic, olives, and seasonings. Toss well.
- Spread the vegetable mixture in the baking dish.
- Place fish fillets on top; drizzle with lemon juice and sprinkle with zest and additional seasoning.
- Bake uncovered for 20-25 minutes until the fish flakes easily and vegetables are tender.
- Garnish with fresh parsley before serving.
