Ingredients
- 3 tablespoons olive oil
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Sauté diced onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and sauté for another 30 seconds before removing from heat.
- In a large mixing bowl, combine the sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until just combined.
- Shape the mixture into approximately eight patties (½ inch thick).
- Heat the remaining olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes per side until golden brown and cooked through.
- Drain on paper towels and serve warm.
