- 1 pound chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 medium zucchini
- 1 large red bell pepper
- 1 medium red onion
- 1 cup cherry tomatoes
- 1/2 cup kalamata olives
- 2 cloves garlic
- 1/4 cup sun-dried tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 2 tablespoons lemon juice
- 1/2 cup feta cheese (optional)
- Fresh parsley (for garnish)
Instructions
- Prepare all ingredients by washing and chopping vegetables; cut chicken into uniform pieces.
- Heat olive oil in a large skillet over medium-high heat.
- Sauté chicken until browned and cooked through (5–7 minutes); remove from skillet.
- In the same skillet, add zucchini, bell pepper, and onion; sauté for about 3–4 minutes.
- Add cherry tomatoes and cook for another 2 minutes.
- Return chicken to the skillet along with olives, garlic, sun-dried tomatoes, oregano, basil, and thyme; mix well and cook for an additional 3–4 minutes.
- Off heat, drizzle with lemon juice and toss in feta cheese if desired.
