- 1.5 lbs Chicken breasts
- 3 tbsp Extra virgin olive oil
- 2 medium Zucchini
- 2 Red bell peppers
- 1 large Red onion
- 2 cups Cherry tomatoes
- 1 cup Kalamata olives
- 4 cloves Garlic
- 1/4 cup Sun-dried tomatoes
- 2 tsp Dried oregano
- 1 tsp Dried basil
- 1/2 cup Feta cheese
Instructions
- Prep all ingredients by cutting chicken into bite-sized pieces and slicing vegetables.
- Heat 2 tbsp olive oil in a skillet over medium-high heat, sear chicken until golden brown, about 5–7 minutes.
- In the same skillet, add 1 tbsp olive oil and sauté onions and garlic until fragrant. Add zucchini, bell peppers, tomatoes, olives, and sun-dried tomatoes; cook until tender.
- Return chicken to the skillet, sprinkle herbs, and toss to combine.
- Finish with lemon juice and gently fold in feta cheese before serving.
