- 4 medium zucchinis, sliced

Instructions
- Preheat oven to 375°F (190°C).
- Wash and prepare vegetables: slice zucchinis, halve tomatoes, dice onion, and mince garlic.
- In a mixing bowl, combine zucchinis, tomatoes, onion, and garlic.
- Place chicken breasts in a baking dish and surround them with the vegetable mixture.
- Season with oregano, basil, salt, and pepper; drizzle with olive oil if desired.
- Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Garnish with chopped parsley before serving.
