- 1 (15 oz) can white (cannellini) beans (drained & rinsed)
- 2 mini cucumbers (chopped)
- 1/2 red bell pepper (chopped)
- 10 oz cherry tomatoes (halved)
- 1/3 cup Kalamata olives (chopped)
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon red apple vinegar
- Fresh parsley, salt, and pepper to taste
Instructions
- Gather and rinse the canned white beans. Chop the cucumbers, bell pepper, and tomatoes.
- In a large mixing bowl, combine the rinsed white beans, chopped cucumbers, red bell pepper, and halved tomatoes.
- Add Kalamata olives and fresh parsley. Mix well.
- In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
- Pour dressing over the salad mixture and toss gently until well coated.
- Serve immediately or chill in the refrigerator for about 30 minutes before enjoying.
