  • 1 tablespoon olive oil
  • 1 tablespoon red apple vinegar
  • Fresh parsley, salt, and pepper to taste

Instructions

  1. Gather and rinse the canned white beans. Chop the cucumbers, bell pepper, and tomatoes.
  2. In a large mixing bowl, combine the rinsed white beans, chopped cucumbers, red bell pepper, and halved tomatoes.
  3. Add Kalamata olives and fresh parsley. Mix well.
  4. In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
