- 4 cups beef broth
- 1 cup water
- 1/2 cup long-grain white rice
- 1 can black beans (drained and rinsed)
- 1 cup frozen corn

- Chopped fresh cilantro
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground beef, cooking until browned. Drain excess fat.
- Add diced onion, bell pepper, and jalapeño (if using). Sauté for about 5 minutes until softened; add minced garlic and cook for an additional minute.
- Stir in cumin, chili powder, smoked paprika, and oregano; cook for another minute before adding diced tomatoes.
- Pour in beef broth and water; bring to a boil. Stir in rice, reduce heat to low, and simmer for about 15 minutes until rice is tender.
- Add black beans and corn; simmer for another 5 minutes until heated through.
- Season with salt, pepper, lime juice, and cilantro. Serve hot with desired toppings.
