Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef, cooking until browned. Drain excess fat.
  2. Add diced onion, bell pepper, and jalapeño (if using). Sauté for about 5 minutes until softened; add minced garlic and cook for an additional minute.
  3. Stir in cumin, chili powder, smoked paprika, and oregano; cook for another minute before adding diced tomatoes.
  4. Pour in beef broth and water; bring to a boil. Stir in rice, reduce heat to low, and simmer for about 15 minutes until rice is tender.
  5. Add black beans and corn; simmer for another 5 minutes until heated through.
