- 2 cups Cooked Corn
- 1 to 2 Tablespoons Mayonnaise
- 1/2 cup Cotija Cheese
- 6 to 12 Corn Tortillas
Instructions
- 1. Marinate chicken in canola oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper for at least 15 minutes.
- 2. Mix cooked corn with mayonnaise, lime juice, chili powder, cilantro, jalapeno, green onions, and garlic salt.
- 3. Grill marinated chicken over medium-high heat for 5-7 minutes per side until fully cooked.
- 4. Warm corn tortillas on the grill or stovetop for about 30 seconds per side.
- 5. Slice grilled chicken and assemble tacos by layering chicken, street corn mixture, avocado slices, cotija cheese, sour cream, and taco sauce as desired.
