Instructions
- Preheat your oven to 325°F (160°C).
- For the crust, crush graham crackers and pecans in a bowl. Mix with melted butter, sugar, and cinnamon, then press firmly into muffin tin cups.
- In another bowl, beat cream cheese until smooth. Gradually add salt and sugar, followed by vanilla and eggs one at a time, mixing until well blended. Fold in sour cream gently.
- Pour filling over each crust until three-quarters full. Bake for about 18 minutes or until set but slightly jiggly at the center.
- Cool completely before refrigerating for at least two hours before serving.
