  • 115g unsalted butter (melted or room temp)
  • 135g light brown soft sugar
  • 55g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100g milk chocolate chips
  • 100300g mini eggs

Instructions

  1. Preheat the oven to 190ºC (170ºC fan) and line a 9×9 inch baking tin with parchment paper.
  2. In a mixing bowl, combine melted butter with both sugars until creamy.
  3. Add the egg and vanilla extract, mixing until well blended.
  4. Sift in the plain flour, cornflour, bicarbonate of soda, and salt; stir until just combined.
  5. Fold in chocolate chips and most of the mini eggs evenly throughout the mixture.
  6. Press the dough into the lined baking tin and decorate with remaining mini eggs on top.
  7. Bake for 18-22 minutes until the top is dry; let cool completely before slicing.
