- 115g unsalted butter (melted or room temp)
- 135g light brown soft sugar
- 55g granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 275g plain flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1 tbsp cornflour
- 100g milk chocolate chips
- 100–300g mini eggs
Instructions
- Preheat the oven to 190ºC (170ºC fan) and line a 9×9 inch baking tin with parchment paper.
- In a mixing bowl, combine melted butter with both sugars until creamy.
- Add the egg and vanilla extract, mixing until well blended.
- Sift in the plain flour, cornflour, bicarbonate of soda, and salt; stir until just combined.
- Fold in chocolate chips and most of the mini eggs evenly throughout the mixture.
- Press the dough into the lined baking tin and decorate with remaining mini eggs on top.
- Bake for 18-22 minutes until the top is dry; let cool completely before slicing.
