- 4 cups chopped kale
- 4 cups chopped red cabbage
- 10 ounces frozen edamame
- 8 ounces soba noodles
- 1.5 tablespoons white miso
- 1 tablespoon tamari or soy sauce
- 3 tablespoons rice vinegar
- 2 cloves garlic (minced)
- 1.5 inches ginger (minced or grated)
- 1 tablespoon maple syrup (or date syrup to taste)
Instructions
- Cook soba noodles according to package instructions. Drain and rinse under cold water.
- Chop kale and red cabbage into bite-sized pieces; thinly slice scallions.
- Boil frozen edamame in water for about 5 minutes, then drain.
- In a bowl, mix miso, tamari, rice vinegar, garlic, ginger, and maple syrup until smooth.
- In a large mixing bowl, combine cooked noodles, vegetables, edamame, scallions, sesame seeds, and peanuts. Drizzle dressing over the mixture and toss gently.
- Serve warm or chilled.
