  • 1/2 teaspoon salt

  • 1/4 teaspoon cloves
  • For the Cinnamon Swirl: 1/2 cup granulated sugar + 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together the zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually fold this into the wet ingredients until just combined; do not overmix.
  4. In a small bowl, combine the cinnamon swirl ingredients (sugar and cinnamon).
  5. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture on top. Add the remaining batter and top with the rest of the cinnamon mixture.
  6. Use a knife to create a swirl pattern through the batter.
  7. Bake for 60–65 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for about 10–15 minutes before transferring to a wire rack.
