Instructions

  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, and garlic powder. Place chicken in a resealable bag and pour marinade over it. Let marinate for at least 1 hour or overnight.
  2. Heat your grill to medium-high (400°F/200°C). Alternatively, use a skillet over medium heat.
  3. Remove chicken from marinade and shake off excess liquid. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C) and nice grill marks appear.
  4. In the last minute of grilling, sprinkle cheese on each breast and close the grill lid to melt.
  5. While cheese melts, mix lime zest into sour cream for a zesty sauce.
  6. Plate your cheesy chicken, top with guacamole and sour cream mixture, and serve with extra lime wedges.
