- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lime juice
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 cup shredded cheese (Mexican blend)
- 1/2 cup guacamole
- 1/2 cup sour cream
- 1 tsp lime zest
Instructions
- In a bowl, combine olive oil, lime juice, chili powder, cumin, and garlic powder. Place chicken in a resealable bag and pour marinade over it. Let marinate for at least 1 hour or overnight.
- Heat your grill to medium-high (400°F/200°C). Alternatively, use a skillet over medium heat.
- Remove chicken from marinade and shake off excess liquid. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C) and nice grill marks appear.
- In the last minute of grilling, sprinkle cheese on each breast and close the grill lid to melt.
- While cheese melts, mix lime zest into sour cream for a zesty sauce.
- Plate your cheesy chicken, top with guacamole and sour cream mixture, and serve with extra lime wedges.
