  • ½ cup panko breadcrumbs
  • 1 teaspoon fine sea salt

Instructions

  1. Sauté chopped onion and sliced mushrooms in a large pan until moisture evaporates; add garlic, thyme, and smoked paprika.
  2. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled, then combine with sautéed mixture, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper; blend until mixed but chunky.
  4. Form into patties using about ½ cup of mixture each (yields approximately 8 burgers).
  5. Bake patties on prepared sheet for 30-35 minutes, flipping halfway through.
