- 8 ounces cream cheese, softened
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 1 1/2 cups ladyfinger cookies, crushed
- 1/4 cup unsalted butter, melted
Instructions
- Prepare the crust by mixing crushed ladyfinger cookies with melted butter. Press firmly into the bottom of a springform pan.
- For the filling, beat cream cheese and mascarpone until smooth. Gradually add powdered sugar and vanilla; mix well.
- Whip heavy cream separately until stiff peaks form, then fold gently into the cheese mixture.
- Assemble by layering half of the cheesecake filling over the crust and drizzling with half of the cooled coffee. Repeat with remaining filling and coffee.
- Chill in the refrigerator for at least 6 hours or overnight before serving.
