  • 1 cup old fashioned rolled oats
  • 1 and 1/4 cups blended oat flour (from rolled oats)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 325°F (160°C) and line baking sheets with parchment paper.
  2. In a bowl or stand mixer, beat softened butter until creamy. Add brown sugar and mix until fluffy. Incorporate egg, egg yolk, and vanilla until well combined.
  3. In another bowl, add all-purpose flour, baking soda, baking powder, and salt on top of the wet mixture without mixing yet.
  4. Mix dry ingredients into wet until just combined; scrape down the sides.
  5. Stir in rolled oats and blended oat flour gently until no dry flour remains.
  6. Fold in chocolate chips evenly.
  7. Scoop dough balls (about 2 inches) onto lined baking sheets, leaving space between them.
  8. Bake for 9-10 minutes until edges are firm but centers remain shiny.
  9. Reshape cookies immediately after removing from oven if needed.
  10. Cool on pans for 5-10 minutes before transferring to wire racks.
