- 3/4 cup softened butter
- 1 and 1/2 cups packed brown sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour

- 3/4 teaspoon kosher salt
- 1 cup old fashioned rolled oats
- 1 and 1/4 cups blended oat flour (from rolled oats)
- 2 and 1/2 cups semisweet chocolate chips
Instructions
- Preheat oven to 325°F (160°C) and line baking sheets with parchment paper.
- In a bowl or stand mixer, beat softened butter until creamy. Add brown sugar and mix until fluffy. Incorporate egg, egg yolk, and vanilla until well combined.
- In another bowl, add all-purpose flour, baking soda, baking powder, and salt on top of the wet mixture without mixing yet.
- Mix dry ingredients into wet until just combined; scrape down the sides.
- Stir in rolled oats and blended oat flour gently until no dry flour remains.
- Fold in chocolate chips evenly.
- Scoop dough balls (about 2 inches) onto lined baking sheets, leaving space between them.
- Bake for 9-10 minutes until edges are firm but centers remain shiny.
- Reshape cookies immediately after removing from oven if needed.
- Cool on pans for 5-10 minutes before transferring to wire racks.
