- 1–1/2 large yellow onions

Instructions
- Prepare the Marinade: In a mixing bowl, combine garlic, Italian seasoning, olive oil, paprika, onion powder, garlic powder, salt, pepper, chicken broth, and Dijon mustard (if using). Whisk until smooth. Add chicken thighs and coat well.
- Preheat Oven: Set your oven to 350°F (175°C) and grease a rimmed baking sheet with cooking spray.
- Prepare Vegetables: On the baking sheet, mix baby gold potatoes, onions, carrots, salt, pepper, and olive oil. Toss to coat evenly.
- Assemble: Nestle marinated chicken thighs among the veggies on the pan. Pour remaining marinade over the chicken and add broth.
- Bake: Cook for 50–55 minutes until the chicken is golden brown and vegetables are tender. Broil for an additional 1–2 minutes for a nice char.
- Serve: Let rest for 5–10 minutes before serving with fresh thyme or crusty bread.
