- 1 cup ricotta cheese

- 3 oz fresh baby spinach
Instructions
- Preheat your oven to 375°F.
- Whisk the egg in a shallow bowl until well beaten.
- In another bowl, combine almond flour, parmesan cheese, garlic salt, Italian seasoning, and pepper.
- Dredge chicken in egg mixture and coat with dry mix; set aside.
- Heat olive oil in an ovenproof skillet over medium-high heat and sear chicken for about 7 minutes total until golden brown.
- Sauté spinach in the same skillet for about 2 minutes until wilted.
- Cut seared chicken into bite-sized pieces and mix with marinara sauce and cheeses in the skillet.
- Bake for 20–22 minutes until bubbly.
