Instructions
- Prepare the blackberry jam by cooking blackberries, water, lemon juice, and sugar in a saucepan for 20-30 minutes until thickened. Smash the berries and let cool.
- Thaw the puff pastry for 20-25 minutes; roll out on a floured surface into rectangles. Spread half of the goat cheese and blackberry jam on each sheet.
- Cut each dough sheet into 12 strips. Fold and gently twist each strip before placing on a parchment-lined baking sheet.
- Brush with egg wash, sprinkle with lemon-thyme sugar, and bake at 400°F for 16-18 minutes until golden brown.
