- 10 oz challah or French bread, cut into large chunks
- 24 ounces frozen sliced peaches, thawed and drained
- 1 1/4 cups almond milk
- 5 eggs
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tsp light butter
- 1/2 tsp ground cinnamon
Instructions
- Grease a 13×9 casserole dish and lay the bread pieces evenly at the bottom.
- In a bowl, whisk eggs and granulated sugar together; add almond milk, vanilla extract, ground cinnamon, and kosher salt. Mix until well combined.
- Pour the egg mixture over the bread and gently press down to ensure all pieces are soaked.
- Cover and refrigerate for at least a few hours or overnight.
- Preheat oven to 350°F (175°C). Add thawed peaches on top of the soaked bread.
- In a separate bowl, mix flour, brown sugar, light butter, and ground cinnamon until crumbly; sprinkle over peaches.
- Bake uncovered for about 45-60 minutes until golden brown on top and set in the center.
