Ingredients
Scale
- 2 cups fresh or frozen peaches (peeled and chopped)
- 2 cups plain Greek yogurt (full-fat or low-fat)
- ¼ cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
Instructions
- If using fresh peaches, peel and chop them into small pieces. Thaw frozen peaches slightly.
- In a blender or food processor, combine peaches, Greek yogurt, honey, vanilla extract, and lemon juice. Blend until smooth.
- Taste the mixture and adjust sweetness by adding more honey or maple syrup if desired.
- If using an ice cream maker, pour the mixture in and churn according to instructions (20-25 minutes). For no-churn method, pour into a shallow container and freeze for 1-2 hours; stir every 30-60 minutes until it reaches soft-serve consistency (about 3-4 hours).
- Serve immediately for a soft texture or freeze for additional firmness.
