Instructions
- Preheat the oven to 350°F (177°C). Spray a muffin pan with non-stick cooking spray.
- Slice peaches into thin wedges. In a small bowl, mix cold butter with brown sugar and distribute evenly in muffin cups; place peach slices on top.
- In a separate bowl, whisk together flour, baking powder, and salt. In another bowl, beat granulated sugar and softened butter until fluffy; add the egg and vanilla.
- Gradually mix dry ingredients alternately with buttermilk until smooth.
- Spoon batter over peach slices in muffin cups. Bake for about 30 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack.
