Instructions
- In a medium saucepan over medium heat, mix butter, brown sugar, and milk until melted and bubbling. Remove from heat.
- Stir in peanut butter and vanilla until smooth, then add oats gradually.
- Scoop portions onto parchment-lined trays, flattening slightly and creating an indentation in each cookie.
- Fill each indentation with caramel sauce.
- Melt chocolate chips in a microwave-safe bowl, then drizzle over cookies.
- Refrigerate for at least 30 minutes until firm.
