- 4 boneless, skinless chicken breasts
- 2 firm ripe pears, diced
- 4 oz Gorgonzola cheese, crumbled
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine diced pears, Gorgonzola cheese, spinach, garlic, salt, and pepper. Mix well.
- Slice each chicken breast on one side to create a pocket and stuff generously with the pear mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for about 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest before serving. Optionally drizzle with balsamic vinegar and garnish with parsley.
