- 4 oz pineapple coconut juice
- 1 cup ice
- Honey or agave (to taste)
- Toasted shredded coconut (for rimming)
Instructions
- Rim a tall cocktail glass with honey and dip into toasted coconut.
- In the glass, muddle mint leaves and lime wedge to release oils.
- Fill the glass three-quarters full with ice, then add lime juice and Vanilla Extract.
- Top off with pineapple coconut juice and gently stir to combine.
- Garnish with additional lime slices, pineapple pieces, and mint if desired.
