Ingredients
- 1½ cups long grain white rice
- 2 cans cream of chicken or mushroom soup
- 1 cup water
- 2 cups milk
- 1 envelope onion soup mix
- 1½ cups shredded cheddar cheese
- 3 boneless skinless chicken breasts or thighs
- Salt and pepper
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, combine rice, soup, milk, water, and onion soup mix; pour into the baking dish.
- Sprinkle half of the cheese over the mixture and nestle chicken on top.
- Cover with aluminum foil and bake for 1.5 to 2 hours until chicken is cooked through.
- Remove foil, add remaining cheese, and bake for an additional 10 minutes until melted.
- Let sit for 15–20 minutes before serving.
