  • 1 box yellow cake mix (15.25 ounces)
  • 2 boxes instant pistachio pudding mix (3.4 ounces each)
  • 4 eggs
  • ¼ cup vegetable oil
  • ⅛ cup water
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • ½ to 1 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the yellow cake mix, pistachio pudding mixes, eggs, vegetable oil, water, and sour cream until well mixed.
  3. Grease two loaf pans and sprinkle with a mixture of sugar and cinnamon.
  4. Pour half of the batter into each prepared pan and bake for about 45 minutes or until a toothpick comes out clean.
  5. Let cool slightly before transferring to wire racks.
  6. Prepare the glaze by mixing powdered sugar, melted butter, almond extract, vanilla extract, and milk until smooth.
  7. Drizzle glaze over cooled loaves and garnish with chopped pistachios.
