- 2 tsp vanilla extract
- Optional: ½ tsp almond extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
- In a mixing bowl, whisk together the flour, ground pistachios, sugar, baking powder, and salt until well combined.
- In another bowl, whisk the eggs, melted butter, milk, vanilla extract, and almond extract (if using) until smooth.
- Gradually pour the wet mixture into the dry ingredients while gently stirring with a rubber spatula until just combined; some lumps are acceptable.
- Spread the batter evenly in the prepared baking sheet and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
