  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion (minced)
  • 3 garlic cloves (minced)
  • 1 green bell pepper (minced)
  • ¼ cup fresh cilantro (chopped)
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs (beaten)
  • Coconut oil for frying

Instructions

  1. Preheat your oven to 356°F (180°C).
  2. Grease a casserole dish.
  3. In a bowl, season ground beef with sazon and adobo.
  4. Sauté onion, garlic, bell pepper, and cilantro in coconut oil until soft.
  5. Add seasoned beef to the skillet and cook until browned.
  6. Mix in tomato sauce and olives/capers; let simmer for 5-10 minutes.
  7. Prepare plantains by slicing them into strips after removing the skin.
  8. Fry plantain strips in coconut oil until golden brown on both sides.
  9. Layer fried plantains at the bottom of the casserole dish and brush with beaten egg.
  10. Add a layer of ground beef mixture topped with dairy-free cheese; repeat layers.
  11. Finish with a top layer of plantains, egg wash, and remaining cheese.
  12. Bake for about 20 minutes until golden brown.
  13. Allow resting before serving.
