- 1/2 cup brown sugar
- 1/4 teaspoon ground cinnamon (for topping)
- 1/3 cup pecans (chopped)
- 1 1/2 cups hot water
Instructions
- Preheat the oven to 350°F (175°C) and grease a 2-quart casserole dish.
- In a bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
- In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
- Gradually combine wet and dry mixtures; transfer to the greased dish.
- For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; spread evenly over the batter.
- Carefully pour hot water over the topping; do not stir.
- Bake for about 40 minutes until set in the center.
- Let cool for 5 minutes before serving.
