  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 2-quart casserole dish.
  2. In a bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Gradually combine wet and dry mixtures; transfer to the greased dish.
  5. For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; spread evenly over the batter.
  6. Carefully pour hot water over the topping; do not stir.
  7. Bake for about 40 minutes until set in the center.
