Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet about 2 inches apart.
  8. Press additional toppings on each dough ball before baking.
  9. Bake for 12 to 14 minutes until edges are golden but center remains soft.
  10. Cool on a wire rack before serving.
