Instructions
- Preheat your oven to 375°F (190°C).
- Grate zucchini and mix with salt; let it sit for 10 minutes to remove moisture.
- In a separate bowl, combine onion, garlic, eggs, cheeses, panko crumbs, and melted butter. Mix well.
- Squeeze excess moisture from the zucchini and fold into the cheese mixture until fully combined.
- Pour into a greased baking dish and top with additional parmesan if desired. Bake for about 25 minutes or until golden brown.
- Let cool slightly before garnishing with fresh parsley and serving.
