- 1 lb rotini noodles
- 3.5 oz pepperoni
- 4 oz salami
- 1 pint cherry tomatoes
- 1 cup black olives
- 1 orange bell pepper
- 1 green bell pepper
- 1/2 cup red onion
- 8 oz mozzarella pearls
- Dressing: olive oil, apple cider vinegar, lemon juice, Parmesan cheese, dried herbs
Instructions
- Cook rotini in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Chop vegetables and slice meats into quarters.
- Whisk together dressing ingredients in a bowl until combined.
- In a large bowl, mix cooked pasta with vegetables and meats; pour dressing over and toss gently.
- Chill for at least an hour before serving or enjoy immediately topped with Parmesan and parsley.
