Instructions
- Preheat your oven to 375°F (190°C) and prepare a non-stick muffin pan.

- Blend softened cream cheese with sugar and vanilla until smooth in another bowl.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Mix egg, oil, buttermilk, cocoa powder, and red food coloring in a separate bowl until well combined.
- Combine wet ingredients into dry ingredients; stir gently until just moistened.
- Fold in the cream cheese mixture until evenly distributed.
- Fill muffin cups two-thirds full with batter. Top with crumb mixture.
- Bake for 17–19 minutes or until a toothpick inserted comes out clean.
