- 4 cups fresh spinach leaves (washed and dried)
- 1 cup mandarin oranges (canned in juice or fresh)
- 1/4 cup thinly sliced red onion
- 1/4 cup slivered almonds (toasted)
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and dry the spinach leaves thoroughly.
- Thinly slice the red onion.
- If using canned mandarins, drain them well and pat dry.
- Toast the almonds in a dry skillet over medium heat until golden brown.
- In a bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until smooth.
- In a large bowl, combine spinach, mandarin oranges, red onion, and toasted almonds. Drizzle with dressing just before serving.
