- 3 lb bone-in lamb shoulder
- Salt & freshly ground black pepper
- 1/4 cup honey
- 3 tbsp soy sauce or Worcestershire sauce
- 4 cloves garlic, minced
- 8 whole garlic cloves, peeled
- 2 tbsp fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 325°F (160°C).
- Season the lamb shoulder generously with salt and pepper.
- In a bowl, mix honey, soy sauce or Worcestershire sauce, minced garlic, and whole garlic cloves.
- Brush the garlic-honey mixture over the lamb until well coated.
- Place in a roasting pan and insert a meat thermometer into the thickest part of the meat.
- Roast until internal temperature reaches 145°F (63°C) for medium-rare.
- Let rest for at least 15 minutes before carving; garnish with parsley.
