  • 1/4 cup honey
  • 3 tbsp soy sauce or Worcestershire sauce
  • 4 cloves garlic, minced
  • 8 whole garlic cloves, peeled
  • 2 tbsp fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the lamb shoulder generously with salt and pepper.
  3. In a bowl, mix honey, soy sauce or Worcestershire sauce, minced garlic, and whole garlic cloves.
  4. Brush the garlic-honey mixture over the lamb until well coated.
  5. Place in a roasting pan and insert a meat thermometer into the thickest part of the meat.
  6. Roast until internal temperature reaches 145°F (63°C) for medium-rare.
  7. Let rest for at least 15 minutes before carving; garnish with parsley.
