- 1 head garlic
- 2 pounds red potatoes (washed and cut into quarters)
- 6 tablespoons butter
- 3/4 cup half and half
- kosher salt
- fresh ground pepper
- 1 tsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
- In a large pot, cover quartered potatoes with cold water and add salt. Bring to a boil over medium-high heat and simmer until fork-tender (about 15 minutes).
- Drain potatoes and return them to the pot. Squeeze roasted garlic cloves from their skins into the potatoes.
- Warm half and half and butter until melted; pour into the pot with potatoes. Mash until creamy but slightly lumpy. Season with salt and pepper.
- Serve garnished with fresh parsley.
