  • 3/4 cup half and half

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
  2. In a large pot, cover quartered potatoes with cold water and add salt. Bring to a boil over medium-high heat and simmer until fork-tender (about 15 minutes).
  3. Drain potatoes and return them to the pot. Squeeze roasted garlic cloves from their skins into the potatoes.
  4. Warm half and half and butter until melted; pour into the pot with potatoes. Mash until creamy but slightly lumpy. Season with salt and pepper.
