- 1–2 large baking potatoes (washed and cubed)
- 2 tablespoons olive oil (divided)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 7 oz (200 g) block of feta cheese
- 1 head of garlic (top sliced off)
- 1 lemon (quartered)
- 1 tablespoon honey
- ¼ cup (20 g) fresh basil, chopped
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and black pepper until evenly coated.
- Spread the seasoned potatoes on a baking sheet in a single layer.
- Place the feta cheese block in the center and position the garlic nearby. Drizzle with remaining olive oil.
- Roast for about 30 minutes, stirring halfway through.
- Add quartered lemon around the dish, drizzle honey over everything, then return to the oven for another 20 minutes.
- After removing from the oven, garnish with fresh basil and parsley before serving hot.
