- 150g salmon fillet
- 1 cup uncooked brown rice
- 2 eggs
- Diced avocado
- Salt & pepper

Instructions
- Rinse and cook brown rice with water and salt in a pot for 25-30 minutes until tender.
- Preheat oven to 180C (350F). Season salmon with salt and pepper; bake for 12-15 minutes until cooked through.
- Soft-boil eggs by cooking them in boiling water for 6-7 minutes; transfer to an ice bath, then peel.
- Assemble by layering cooked rice, salmon, diced avocado, and soft-boiled eggs in a bowl. Drizzle with balsamic glaze if desired.
